Butter Bean Dip
A creamy, lemony dip that comes together in minutes. Perfect with crackers, veggies, or warm bread.
Ingredients:
• 1 can butter beans, drained
• Zest from ½ lemon
• Juice from ½ lemon
• Fresh garlic (1 clove, grated) or ½ tsp garlic powder
• Salt, to taste
• 1 tbsp olive oil
• Optional: 1 tbsp Greek yogurt
Instructions:
Blend all ingredients until smooth. Taste and adjust salt or lemon as needed.
Top with a drizzle of olive oil and a sprinkle of paprika.
