Crispy Lemon Herb Sausage Bowl
with herby yogurt sauce + feta magic
This is one of those “throw it in the oven and feel accomplished” meals. Crispy potatoes. Roasty broccoli. Juicy chicken sausage coins. Bright lemon-herb yogurt sauce.
And then — the salty feta finish that makes it feel ✨restaurant-y✨.
It’s simple, affordable (Aldi + Trader Joe’s supremacy), and reheats beautifully for work lunches.
Ingredients
For the bowl:
1 pack (4 links) chicken sausage (I love the Aldi or Trader Joe’s ones)
1 head broccoli, cut into bite-size florets
2 large russet potatoes, peeled & cubed
Olive oil
Salt
Favorite seasonings
I love a smoky BBQ blend for the potatoes
Trader Joe’s Green Goddess seasoning for the sausage + broccoli
Feta cheese, crumbled (don’t skip this)
For the herby yogurt sauce:
1 cup Greek yogurt
Zest + juice of 1 lemon
1 bunch parsley, stems trimmed
1 bunch dill, stems trimmed
1 clove garlic (or a few if you’re a garlic girl like me)
Salt
Good olive oil
1. Roast the Potatoes
Preheat oven to 400°F.
Toss cubed russet potatoes with olive oil, salt, and your favorite seasoning (I love a smoky BBQ blend here).
Spread on a sheet pan and roast for 20 minutes.
Flip, then roast another 15–20 minutes until golden and crispy.
2. Roast the Sausage & Broccoli
Slice the chicken sausage into coins.
On a separate pan, toss sausage coins and broccoli florets with olive oil, salt, and seasoning (Trader Joe’s Green Goddess is elite here).
Roast at 400°F for about 18 minutes, tossing halfway through, until the broccoli edges get a little crispy and the sausage is browned.
3. Make the Herby Lemon Yogurt Sauce
While everything is roasting:
In a food processor, blitz:
Lemon zest + juice
Parsley
Dill
Blend until finely chopped.
In a bowl, stir together:
1 cup Greek yogurt
The herb mixture
Grated garlic
A drizzle of good olive oil
Salt to taste
It should be bright, creamy, and very lemony.
Assemble
Layer potatoes, sausage, and broccoli in a bowl.
Top with:
A generous spoonful of herby yogurt sauce
A handful of crumbled feta
The feta melts slightly from the warmth and gives you that perfect salty pop against the lemony sauce.
Leftover Notes
This reheats SO well. I store the sauce separately and add feta fresh if I can (but honestly? Even pre-mixed leftovers slap).
