Crunchy Everyday Coleslaw (My Fiber Era)

This is my current hyperfixation side dish. It’s creamy, tangy, and somehow gets even better the next day. Perfect with tacos, sandwiches, bowls… or eaten straight from the fridge between emails.

Ingredients

Slaw:

  • ½ red cabbage, thinly sliced

  • 3 medium carrots, peeled & shredded

  • 1 large shallot, finely diced

Dressing:

  • ½ cup mayo (Kewpie or Duke’s are elite)

  • 2½ tablespoons white wine vinegar

  • Juice from ½ lemon

  • 1 garlic clove, grated

  • A generous shake (or three) of Trader Joe’s Green Goddess seasoning

  • Salt + pepper, to taste

Instructions

  1. In a large bowl, combine cabbage, carrots, and shallot.

  2. In a separate small bowl, whisk together mayo, vinegar, lemon juice, garlic, seasoning, salt, and pepper.

  3. Pour dressing over the vegetables and toss until everything is evenly coated.

  4. Taste and adjust salt, acidity, or seasoning as needed.

  5. Let sit for at least 20 minutes before serving — it’s even better the next day!!

my knife skills leave something to be desired… still turns out delish every time though!
